Happy Christmas to all! I meant to post yesterday, but the family time was wonderful and I didn't want to spend one moment away...
Christmas morning we had abelskiver, round pancakes that are a Danish favorite...
3 beaten eggs
2 cups sour milk or buttermilk
1 tbs sugar
1 tsp baking soda
2 tsp baking powder
2 cups flour
1/2 tsp freshly ground nutmeg
pinch of salt
Mix eggs and milk well, then combine remaining ingredients with a hand mixer.
Fry in an abelskiver pan over medium heat that has been greased well with butter.
*Serve with sugar to dip the pancakes.
The only thing tricky about this recipe is to know just when the pancakes are done. My mother always used a metal knitting needle to pierce one or two of the pancakes...
